Black pepper (Piper nigrum) is flowering vine in the family Piperceae, cultivated for its fruit, known as a peppercorn, which is generally dried and used as a spice and seasoning. The fruit is drupe (stone fruit) which is about 5 mm (0.20 in) in diameter (fresh and fully mature), dark red, and contains a stone which encloses a single pepper seed. Peppercorns and the ground pepper extracted from them may be described simply as pepper , For instance, the cooked and dried unripe fruit is black pepper, the green pepper is from the dried and unripe fruit, and white pepper is the seeds from the ripened fruit of the plant. Its spiciness is due to the chemical compound piperine, which is a different kind of spice from the capsaicin of chilli peppers.
